Creamy Scrambled Eggs with A Twist
Makes: 2-3 servings
1 large onion, finely chopped
1 tsp Dijon mustard
1 tbsp ghee
1 tsp curry powder
5 ounces cream cheese
1 tbsp water (optional)
1 tsp chives for garnish (optional)
Salt and pepper to taste
Place a skillet over medium heat and add ghee. Add the chopped onion and sauté it until golden brown. Season it with a little salt and curry powder.
Place the cream cheese in a microwave-safe container and microwave it until soft (30 seconds on high temperature).
Whisk in Dijon mustard and eggs to the cream cheese. Keep whisking until the mixture is even, frothy, and smooth.

Salt to taste
Preheat the oven to 365° F.
Take the almonds in a bowl; add ghee, and all the other spices to it.
Mix it until the almonds are well coated.
Place these almonds on a baking tray lined with parchment paper.
Bake it in the oven for 12-15 minutes at 365° F or until golden brown.
Halfway through the baking time, stir the almonds and allow them to cook evenly.
